Fermentation is cold-controlled, using only wild yeasts, in oak barrels of 300 liters. It is also aged on its lees until March. The wine is full of fresh white fruit aromas and has a round taste. It is a good drink with grilled fish or shellfish with sauce. It can also be enjoyed with oven-baked white meats. It is a rare grape variety and an interesting time to learn to drink with those who are into wine.
