Fermentation at controlled temperatures for 8 to 72 hours. No lactic fermentation. Ruby in color with fine, dynamic bubbles, it reveals aromas of blackcurrant and raspberry confit and lightly buttered biscuit. The palate is fresh, with lingering freshness of red fruit jam and bitter orange.
