The strained juice is placed in tanks for natural fermentation (local yeast). After fermentation, the cider is distilled in the spring. The resulting eau-de-vie is colorless and rich in floral and fruity aromas. It is aged in oak barrels for a minimum of four years, using blending techniques to create the unique style of Calvados Maison Elle-. The aim is to achieve a balance between fruit and woodiness, delicacy and complexity, roundness and power, and to bring out the pristine aromas of the Calvados AOC without artificial coloring.
