Most of Bourdaire Gallois' cuvées are made exclusively with Pinot Meunier. The northern part of the Champagne region was once the sea, and unlike other areas, the soil is made of sandy beach-like sand.

The northern part of Champagne used to be the sea, and unlike other areas, the soil is made of silty sand.

This soil is called “Sablo-Limoneux”.

The Pinot Meunier grown on the Sablo-Limoneux soils, especially in Pouillon, Thil, Villers-Franqueux, and Hermonville, covering 5 hectares, gives Champagne its unique freshness, minerality, and fruity character, The Pinot Meunier grown in the Sablo-Limoneux soils over five hectares in Hermonville-Hermonville, gives Champagne its unique freshness, minerality and fruity character.
